Ingredients
- 1 pound tomatoes, cut into bite-sized pieces
- 1 cucumber, sliced into half-moons
- 1 avocado, cubed
- 1/3 cup red onion, thinly sliced
- 1/2 cup fresh herbs, chopped
- 4 tablespoons olive oil
- 3 tablespoons red-wine vinegar
- Salt
- Pepper
Instructions
- Combine all the veggies, avocado, and herbs into a large bowl.
- Drizzle with olive oil, red-wine vinegar, and a pinch of salt and pepper.
- Toss gently.
