Ingredients

- medium onions, sliced
- 1 red bell pepper, sliced
- 1/2 tablespoon olive oil
- 1/2 teaspoon salt
- pinch black pepper to taste
- 8 low-carb tortillas of your choice
Shrimp
- 1 1/2 pounds peeled shrimp
- 1 teaspoon olive oil
- 2 cloves garlic, chopped
- 1/2 teaspoon salt
- pinch black pepper to taste
- 1/4 teaspoon tajin
- 1 lime
- 1/3 cup cilantro
Instructions
- Heat oil in a medium skillet. Add onions, bell pepper, and salt and pepper.
- Cook until onions are caramelized.
- Season shrimp with tajin, salt and pepper.
- Heat oil in another skillet on high.
- Add garlic and shrimp and cook for 2 minutes on each side. Remove from heat.
- Add lime juice and cilantro to shrimp. Toss well.
- Combine onion mixture with shrimp and serve on low-carb tortillas.
- Add toppings of your choice.
