Shrimp Fajitas

Shrimp are small but they’re packed with protein, vitamin B12, and other vitamins and minerals. Fresh, flavorful, and ready to load up with your favorite toppings.

Ingredients

Toppings + Extras

  • medium onions, sliced
  • 1 red bell pepper, sliced
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon salt
  • pinch black pepper to taste
  • 8 low-carb tortillas of your choice

Shrimp

  • 1 1/2 pounds peeled shrimp
  • 1 teaspoon olive oil
  • 2 cloves garlic, chopped
  • 1/2 teaspoon salt
  • pinch black pepper to taste
  • 1/4 teaspoon tajin
  • 1 lime
  • 1/3 cup cilantro

Instructions

  1. Heat oil in a medium skillet. Add onions, bell pepper, and salt and pepper.
  2. Cook until onions are caramelized.
  3. Season shrimp with tajin, salt and pepper.
  4. Heat oil in another skillet on high.
  5. Add garlic and shrimp and cook for 2 minutes on each side. Remove from heat.
  6. Add lime juice and cilantro to shrimp. Toss well.
  7. Combine onion mixture with shrimp and serve on low-carb tortillas.
  8. Add toppings of your choice.
