Ingredients
- 4 ripe avocados
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint
- 3 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 2 tablespoons coarsely chopped pomegranate seeds
- 1 tablespoon finely chopped preserved lemon peel
- salt to taste
Instructions
- Cut avocados in half and remove pits
- Mix the remaining ingredients in a bowl and tehn scoop over avocado cups.
