Ingredients
- 2 pounds stewing beef
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons olive oil
- 1 onion, chopped
- 6 cups beef broth
- 1 pound potatoes, peeled and cubed
- 4 carrots, cut into 1-inch pieces
- 4 stalks of celery, cut into 1-inch pieces
- 3 garlic cloves, minced
- 3 tablespoons tomato paste
- 2 tablespoons cornstarch
- 3/4 cup peas
Instructions
- Combine flour, garlic powder, salt and pepper. Toss stewing beef in mixture.
- Heat olive oil in large pot. Add in beef and onions and cook until browned.
- Add beef broth and mix.
- Stir in potatoes, carrots, celery, garlic and tomato paste. Reduce heat to medium low. Cover and let simmer for an hour or until the beef is tender.
- Add cornstarch if the stew needs thickening.
- Stir in peas and simmer for 5-10 minutes. Season with salt and pepper.
