Ingredients

  • 1 pound tomatoes, cut into bite-sized pieces
  • 1 cucumber, sliced into half-moons
  • 1 avocado, cubed
  • 1/3 cup red onion, thinly sliced
  • 1/2 cup fresh herbs, chopped
  • 4 tablespoons olive oil
  • 3 tablespoons red-wine vinegar
  • Salt
  • Pepper

Instructions

  1. Combine all the veggies, avocado, and herbs into a large bowl.
  2. Drizzle with olive oil, red-wine vinegar, and a pinch of salt and pepper.
  3. Toss gently.
