Ingredients
- 1 cup sweet potato, cooked and mashed
- 2/3 cup unsweetened applesauce
- 1/2 cup brown sugar
- 1/4 cup melted cocunut oil
- 1/2 cup plain Greek yogurt
- 2 teaspoons vanilla extract
- 2 eggs
- 1 1/3 cups whole wheat flour
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
Instructions
- Preheat oven to 375 degrees F and line or grease a 12-cup muffin tin.
- In a large bowl, whisk together mashed sweet potato, applesauce, sugar, oil, yogurt, vanilla, and eggs.
- Add the flour, spices, baking powder, baking soda, and salt. Stir just until batter is smooth.
- Pour into the muffin tin and bake for 20 minutes. A toothpick inserted into the middle of a muffin should come out clean.
