Sweet Potato Muffins

Made with whole wheat, these muffins are fluffy and moist while both healthy and delicious.

Ingredients

  • 1 cup sweet potato, cooked and mashed
  • 2/3 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 1/4 cup melted cocunut oil
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 1/3 cups whole wheat flour
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 375 degrees F and line or grease a 12-cup muffin tin.
  2. In a large bowl, whisk together mashed sweet potato, applesauce, sugar, oil, yogurt, vanilla, and eggs.
  3. Add the flour, spices, baking powder, baking soda, and salt. Stir just until batter is smooth.
  4. Pour into the muffin tin and bake for 20 minutes. A toothpick inserted into the middle of a muffin should come out clean.
