Avocado Cups with Pomegranate Salsa

Invited to a last-minute end-of-summer cookout? Look no further than these easy to assemble avocado cups packed with vitamins. 


  • 4 ripe avocados
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons coarsely chopped pomegranate seeds
  • 1 tablespoon finely chopped preserved lemon peel
  • salt to taste


  1. Cut avocados in half and remove pits
  2. Mix the remaining ingredients in a bowl and tehn scoop over avocado cups.
